Cawl is a traditional Welsh stew, made with lamb, potatoes and vegetables topped with a puff pastry lid and served with a warm crusty roll.
The story behind the puff pastry lid:
Chef’s mam and his family come from Bethesda, North Wales. Mam would make cawl when he was a child but as children they didn’t like stew so she put a pastry lid on it and told them it was hot pot and they loved her hot pot!!!
